[UIMA-5856] Use modern checksum algorithms during release
- Upgraded to latest Apache Parent POM (which also includes SHA-512 checksum generations, but we overwrite the generates files as we use another format including not only the hash but also the filename)
- Disable the generation of SHA1 hashes
- Added generation of SHA-512 hashes
