RAVE-59: Create automation for building of demo package

- adding a maven assembly configuration to package the demo/bin package
- adding basic skeleton legal and documentation files to be bundled with the demo/bin package
note: those need to be further filled in and be completed through RAVE-63 and RAVE-64
